seared salmon with sauce

Begin by allowing your salmon to come to room temperature. As the salmon rests outside the fridge, make the sauce.

Heat 1 tsp of butter in a saucepan until melted over a medium heat, and then saute the garlic until it starts to go golden brown. Squeeze in the lemon juice and then stir in the chicken stock. Bring your sauce to the boil, and then allow to simmer until it has reduced by half. Lastly, whisk in the honey and the rest of the butter. Set the sauce aside whilst you make the seared salmon.

Dry the salmon fillets with a paper towel on both sides, and then season with salt and pepper. Heat¬†the olive oil in a non stick frying pan over a medium high head until it’s shimmering. Place the salmon in the man and cook for 4 minutes on one side. Once the first side is golden brown, turn the salmon over and cook for until 2-3 minutes until both fillets are cooked all the way through.
